Quick Tips - Potato Tricks

Found this article in this weekends edition of Parade Magazine and thought I would share it with all of you.

•Great steak fries: Cut Idaho potatoes into 4 thick slices lengthwise and then in half crosswise. Toss with olive oil and cumin. Bake at 400°F for 30 minutes. Sprinkle with coarse salt.
•Mini-pancakes: Combine grated potato with herbs, salt, and pepper. Drop 2 Tbsp of mixture into hot clarified butter; fry until golden on both sides.
•Baked: Prick with a fork. Bake at 375°F for 1¼ hours. Serve hot with salt, pepper, butter, and sour cream; sprinkle with snipped chives.
•Restuffed: Scoop out a baked potato, leaving skin intact. Combine with blue cheese, butter, salt, and pepper. Restuff potato, sprinkle with paprika, and bake for 15 more minutes at 375°F.
•Boiled: Layer slices of boiled potatoes, avocado, and tomato. Drizzle with olive oil and season with salt and pepper.
